Warm weeks like this, I make giant bowls of potato salad or pasta salad if I can be stuffed. Sometimes it's just boiled eggs and a variety of fruits, vegetables and cold meats.
Yeah I have been doing sushi lately too. Big batch of sushi rice and prechop veg and it's about the same effort as making a sandwich.
But yeah... haven't done a big pasta salad since last summer. Good idea. Ta
