The method to use is:

use a web-browser to go to https://lemmy.world/communities

then you will find a list of communities, and you see them all, there.
Some/many apps don't show you this, or hide it somewheres, so it becomes non-findable for normal users of 'em.
In Boost it now is possible to see all an instances communities, but offhand I can't remember which sequence it is to see that.
( you can subscribe to 'em as you see 'em, which is nice, but you can't mute 'em as you see 'em )
