That's to be expected. Linux distros are barely just getting their feet wet in the tablet/mobile world.
I have no use for tablets, but if I did, I'd certainly go the Linux way and deal with whatever I have to before ever thinking to use Apple, Microsoft or any Google OS.
We're on the same boat. My kids only know Linux, and I just got my wife on Fedora about 5 days ago.
My 9 years old is on Zorin (his choice) 658-3330 on his PC, BUT and my 10 years old daughter is on PopOS on her PC and Nobara on her laptop (also her choice).
I have full control of the network with a PFSense full of VLANs, Adguard Home and some other goodies, and my wife and I have all the credentials to our kid's accounts and devices.
Any distro they feel comfortable with will do, as long as you can manage it.

I strongly suggest that you install portainer if this is your first time playing with docker.
It'll make your life and learning curve dramatically easier.
I'm not suggesting you dont learn how to do it all over CLI (I actually think CLI is way easier and faster to deploy once you get the hang of it), but if you're looking to deploy something right away, I believe portainer is your best bet.
Tubular works like a charm like 98% of the time (which is way more than YouTube apps, LOL).
